About Bucky's
The Anti-Smash Burger Brand
Somewhere along the way, the burger got flattened. Thin patties, crispy edges, and not much else. At Bucky's, we're pushing back. We're an anti-smash burger brand on a mission to bring THICK. JUICY. BEEF. back to the center of the plate — the way a real burger is supposed to be.
What We Make
Every Bucky's menu item is chef-crafted and built for flavor, not trends:
The Bucky Burger — our signature thick, juicy burger, stacked with melty cheese, crispy bacon, pickles, and house sauce on a toasted bun. No smashing. No shortcuts. Just real beef with real bite.
Chicago Italian Beef — slow-cooked, thin-sliced Italian beef sandwiches dripping in savory jus, made the classic way and worth every napkin.
Beer-Battered Onion Rings — golden, crunchy, and made to be shared (or not).
Who We Are
Bucky's is the flagship restaurant concept from Offbrand Goods, the food brand created by Kyle Garcia and Chef Merrill Whiston — a Chopped champion and former Chef de Cuisine at acclaimed restaurants Llama Inn and Buddakan. Together, they're the team behind OHBOY, the burger spot that landed on Eater's Best Burger list and earned press from Eater, The Infatuation, Time Out, Thrillist, and The Drew Barrymore Show.
That means every Bucky's burger, sandwich, and side comes with serious culinary credentials behind it — chef-driven food with the energy of streetwear, music, and community baked in.
Why Anti-Smash?
Smash burgers had their moment. We're here for what comes next: thick burgers with a proper sear, a juicy center, and enough beef to actually taste. Bucky's stands for quality over gimmicks — real burgers, real Italian beef, and real flavor from chefs who've cooked at the highest level.
More Than a Burger Joint
Bucky's is part of the Offbrand family, a food brand connecting great cooking to culture — from chef-crafted seasonings, sauces, and hot sauces to collaborations with names like Nike, KidSuper Studios, ESPN Films, and Tribeca Festival. When you eat at Bucky's, you're not just grabbing a burger. You're part of the brand.
Follow along — the Bucky Burger is just the beginning.
